ABOUT TIN'S

Tin's is a new three-floor restaurant concept on the Lower East Side of Manhattan. First floor: Shanghai Diner. Basement level: cocktail bar. Below that: private dining room. We are in pre-opening and are building out a full team ahead of launch.

THE ROLE

We are hiring prep cooks to handle daily prep, production, and kitchen support. You set up the line for service — sauces, proteins, vegetables, garnishes, and everything that goes into the walk-in. If prep is off, service is off.

RESPONSIBILITIES

• Execute daily prep lists as assigned — sauces, proteins, vegetables, starches, garnishes.
• Follow all recipes and portioning standards precisely. Consistency across batches is required.
• Wash, peel, chop, dice, mince, blanch, marinate, and portion to specification.
• Label and date all prepared items. Rotate product — first in, first out.
• Maintain a clean, organized prep station throughout your shift.
• Receive, inspect, and store deliveries — check temperatures, quality, and quantities.
• Communicate product shortages, quality issues, or equipment problems to the Sous Chef immediately.
• Assist with special projects — event prep, large-format production.
• Support the line during service if called upon.
• Break down and clean your work area and shared prep spaces at the end of shift.

REQUIREMENTS

• Minimum 1 year kitchen experience in a professional prep or cook role.
• Solid knife skills — consistent and comfortable for extended periods.
• Understanding of food safety fundamentals — temperature control, cross-contamination, proper storage.
• Ability to follow recipes accurately and produce consistent results.
• Organized and efficient work habits.
• Physical stamina for full kitchen shifts.
• Punctual and reliable. Prep that's not ready on time means service starts behind.
• NYC Food Handler certification (or willingness to obtain before start).

PREFERRED

• Experience with Chinese, Shanghainese, or East Asian ingredients and techniques.
• Comfort with wok prep — aromatics, sauces, stir-fry mise.
• Interest in growing into a line cook role.
• Fluency in Chinese is a big plus
